I made my first “real” cake this weekend for Easter dinner–lemon coconut cake with four layers! I was really nervous that it wouldn’t taste good because most of my dishes always come out not quite like they should. I also had a really hard time getting the coconut shreds to stay on the cake sides. But the cake was mouth watering and so moist. And you know when people are going for seconds, it’s a good sign.
