We are staying cool with homemade ice cream. I bought an ice cream maker the beginning of summer and we have finally pulled it out to make homemade ice cream with the strawberries we picked a few weeks ago. The kids are convinced that we don’t ever have to buy ice cream from the store again and have been thinking up a variety of ice cream concoction we can make.
Strawberry Ice Cream
2 cups of frozen strawberries
Juice from half of lemon
1 cup of sugar, divided
1 cup of whole milk
2 cups of heavy whipping cream
1 tsp of pure vanilla
In bowl, combine strawberries, lemon and 1/3 sugar. Let strawberries thaw out and macerate with the lemon juice on counter. After, put in blender (Vita mix or Blendtec) and blend until smooth.
In a medium bowl, use a hand mixer to combine milk and remaining sugar and mix until sugar dissolves. Then stir in heavy cream, strawberry mixture and vanilla. Pour into ice cream machine and follow directions.
